Well, Tóng Lè Private Dining offers such a top-of-the-world experience. Sort of. It sits within the revolving tower of OUE building, and though it is on the tenth level, the experience spans across two levels and it is absolutely incredible. Using only the finest and most premium ingredients from around the world, expect world-class contemporary Chinese cuisine prepared by the team of highly-trained chefs, impeccable service by the team of polished wait staff, and a panoramic view of the Marina and Collyer Quay from the top. Tóng Lè Private Dining is indeed one of the best-kept secrets in town.

Our recent meal was one so remarkable that had us lingering for more. We are already planning a second visit back, and the two extremely value-for-money new sets – a 6-course Sky lunch (S$60/pax) and 7-course Heavenly Dinner (S$80/pax) — sweeten the idea even further. You might think an elaborate meal like this would cost a bomb; well, we thought so too. We were pleasantly shocked by the digestible price tags.

Still not your everyday restaurant prices of course, but for the amount and (superb) quality of food you get, it is a pretty sweet deal and it is little wonder the restaurant is regularly packed with loyal fans every day.

If you haven’t tried, here is sharing our experience and we know for sure you’ll be a fan with just one try. Here’s why Tóng Lè Private Dining is the best Chinese fine dining restaurant in Singapore.

ONE OF THE MOST ROMANTIC CHINESE RESTAURANTS IN SINGAPORE – DINE WITH A REVOLVING VIEW OF SINGAPORE’S SKYLINE

It is one of the most romantic Chinese restaurants in Singapore for that important occasion. Elegantly furnished with seductive lighting and mirrored floor-to-ceiling panels and glossy black walls, Tóng Lè Private Dining offers a remarkable dining experience that is second to none.

Age-long recipes are reinterpreted for their one-of-its-kind menus; savour the bests from Tóng Lè’s chefs and arouse your taste buds with their intricate culinary, and let the revolving view of Singapore’s prized skyline marvel you. The tower revolves at a really slow speed so you almost cannot feel anything at all, so not to worry because your soup won’t spill.

Being a private dining restaurant, Tóng Lè is able to tailor a special menu according to your preferences. Don’t eat lamb? Sure, you can always change it to a serving of wagyu beef. Feel like pampering yourself with some bird’s nest and abalone? The guest relation executive will include that in a specially customised menu just for you.

Sky Lunch

SKY LUNCH AND HEAVENLY DINNER SETS AT S$60++/PAX AND S$80++/PAX RESPECTIVELY

Dining out in Singapore is getting increasingly expensive, and you probably have to be prepared to spend at least S$30 for a substantial main course at a decent restaurant. And that is why we appreciate Tóng Lè Private Dining’s new Sky Lunch and Heavenly Dinner sets (available only on Saturdays and Public Holidays, except from 19 Feb to 5 Mar 2015).

Lobster rice

Options begin from S$60++/pax for the decadent 6-course Sky Lunch Set, and before you start thinking about how big the price tag is, let us share that with the amount, there will be lobster, wagyu and scallop options.

Tanfu Broth

The 7-course Heavenly Dinner Set is S$80++/pax, but you get premium Australian lobsters and the prized ‘Tanfu’ Broth with seafood treasures. This dish in was the highlight of our meal and it deserves a special mention – using only the most premium treasures from the sea, the chefs put them to boil overnight, and the result is a thick, sweet broth that encompasses the various flavours of the fish maw, abalone, sea cucumber and scallops. We would go back for dinner just for this wonder of a broth.

Wagyu Ribs

Other noteworthy dishes from the Sky Lunch include the Braised Kagoshima Wagyu Ribs with Trio Sauce, as with the Sautéed Australian Scallop with ‘Sze-Chuan’ Pepper accompanied with Japanese Noodles in Garlic Sesame Sauce. Boy, that was really long, and we slurped it all up before we could finish reciting its name.

Chilled Pumpkin Purée

As for the Heavenly Dinner, as much as we’d love to do three servings of the ‘Tanfu’ broth, we would save space for the Sautéed Egg White topped with Kaluga Queen Caviar that boasts a fascinating blend of textures and flavours, and the Chilled Pumpkin Purée topped on Coconut Ice-cream. Served in young coconut, this dessert is the ideal tropical sweet!

Admittedly, not everyone can fork out S$80++/pax for dinner every day, but if you are looking to celebrate a special occasion, Tóng Lè’s 7-course dinner is a bargain, and a place that we will always reserve for a truly special night.

Grilled Iberico Pork

FEAST FOR THE ROYALTY – THE KING & THE QUEEN @ S$220++/PAX

When you need to host an important guest, or are in the celebratory mood, fine dining need not be French nor Italian. It can be Chinese, in a very contemporary setting, and with meticulous service all the way. The King & The Queen menu is your best bet, and it would be a feast that is fit for every royalty.

Noodle

Don’t be put off by the price tag yet, because if you decide to pay this amount, be rest assured that you are in for a night of sheer indulgence and you will eat nothing but only the most magnificent.

Buddha Jump Over The Wall

Have a wonderful beginning with the Sautéed Crab with Egg White, which is then succeeded by the Prosperity Pot – otherwise known as the Buddha Jump Over The Wall which comes with bird’s nest instead of the usual shark’s fin. We had already died and gone to heaven by now. But there are many more lavish creations in this menu, like the Poached Canadian Geoduck Clam in Cordyceps Chicken Consommé, Grilled Iberico Pork with Sea Salt, and Yam Paste with Gingko Nuts topped on Coconut Ice-cream.

A royal feast, indeed. Do note that a pre-order of 1 day in advance is necessary for this menu, and it is for a minimum of 2 persons.

Sauteed Egg White

So with these, you’d know what weekend plans to make, yes? The promotional prices for Sky Lunch and Heavenly Dinner are only applicable for Saturdays and Public Holidays, and we think it is the perfect way to receive the weekend!

The Deep-fried Crispy Bun with Chilli Crab Fillings (S$5.00/pc) is Chef Loh’s tribute to Singapore’s national dish – Chilli Crab. Instead of deep-fried man tou, it comes in the form of a crispy bun fried to a beautiful shade of gold and with the most tantalising chilli crab filling. Suckling Pig

BARBECUED SUCKLING PIG WITH FOIE GRAS, YAM AND JAPANESE CUCUMBER

And this, our friends… this is the bomb! We started our meal with this dish that combines all our favourites into one. Can you imagine the distinct textures of crispy crackling, chewy fats and creamy foie gras altogether? Once you’ve tried this dish, you will never look at suckling pig the same way again. Who would have thought that suckling pig and foie gras would go so well together? But then again, everything tastes better when you add foie gras in it.

For S$35 per portion, it may seem expensive, but think of all the premiums you’re gonna get on one plate. An indulgent treat that will be worth your while, we’d say.

Tomato Soup

CHEF’S SPECIAL TOMATO SOUP WITH LOTUS SEED

Nothing like the usual Western-style tomato soup that we are all too familiar with. Xin Cuisine’s rendition remains very skewed for Asian palettes, and the Chef’s Special Tomato Soup with Lotus Seed (S$10 per portion) is a creative vegetarian option for those who are seeking a light taste. Nourishing with a tinge of tanginess, this signature soup is boiled over low heat for long hours to produce that natural thickness. This makes a lovely soup dish to whet your appetite.

Lamb Chop

PAN-FRIED LAMB CHOP AND THREE MUSHROOMS WITH POMMERY MUSTARD SAUCE

There are not many Chinese restaurants in Singapore who do lamb meat well, and we happened to be craving for lamb that evening at Xin Cuisine. Oh God, when the chef presented this Pan-fried Lamb Chop and Three Mushrooms with Pommery Mustard Sauce (S$15 per portion) dish, our eyes lit up and our hearts skipped a beat.

The mustard sauce cuts through the meat so well that there was almost no taste of gaminess. And it is served with lovely onion ring that is homemade with big and fresh onions.

BBQ Pork

BARBECUED PORK RIB WITH SPECIAL PLUM SAUCE

If lamb is not your thing, try the Barbecued Pork Rib with Special Plum Sauce (S$12 per portion). Also classified as the chef’s signature, we enjoyed the tender pork rib. Plum sauce is just about the perfect complement, and it has a faint spicy note on the aftertaste. We can totally understand why this dish is so popular!

Roast Duck

HOME-STYLE ROAST DUCK WITH TEA LEAVES

Chinese roast duck is always a good idea, right? Especially so if it is roasted with tea leaves! That unique fragrance with a woody note will definitely tug your heartstrings, and it is indeed “home-style” – comforting with a touch of elegance. It comes in either a half portion (S$28) or a whole duck (S$52).

Baked Sea Perch

BAKED SEA PERCH WITH JAPANESE MISO SAUCE

If we had to pick a single favourite from the entire menu, the Baked Sea Perch with Japanese Miso Sauce (S$16 per portion) is definitely it. A generous slab of sea perch that is baked fresh with no marination or anything funny to change its taste, this is one hearty fish dish that had us scrambling for adjectives to describe it.

We don’t even think ‘heavenly’ is befitting enough! And that Japanese miso sauce that goes with the fish? Yipe, salty yet light; more than perfect.

Brown Rice

FRIED FRAGRANT AND BROWN RICE SERVED IN STONE CASSEROLE

Fried Fragrant and Brown Rice with Roasted Pork, Diced Shrimp, Dried Scallop, Peanut and Raisin, served in Stone Casserole. Boy, that was quite a mouthful! But it also means there are heaps of goodness in that stone casserole! It is not your ordinary carbs dish; it is a carbs dish that is earthy, so flavourful, and it will be worth the calorie count. Good for sharing, and it comes in three sizes – S$20 for the small, S$30 for the medium, and S$40 for the large.

Braised Lobster Noodle

BRAISED LIVE LOBSTER EE-FU NOODLE

The Lobster Noodle is nothing fancy; just well-cooked noodles paired with lobster. At S$22 per portion, it is an absolute steal for a decadent bowl of happiness. And you read that right; live lobsters mean you get nothing but the freshest treasure of the sea.

DIM SUM

Dim Sum is another reason why you should head to Xin Cuisine. Most of the dim sum are reasonably priced at S$4.50 per basket. The dim sum menu is available daily, and on Sundays and Public Holidays, the menu features additional items.

The classic offerings – including Siew Mai, Xiaolongbao, Har Gau – are all nicely executed, but if you are there for yum cha with your family on Sundays, you can look forward to other noteworthy creations that include Steamed Melon Ring with Shrimp, Pork Paste in Abalone Sauce (S$4.50 for 3 pcs), Steamed Cuttlefish with Spicy Sauce (S$4.50), Baked Chocolate and Custard Bun ($ 6.00 for 3 pcs) and Deep-fried Bacon and Crab Claw with Salad Sauce ($9.00 for 3 pcs).

Chock full of liquid gold, Xin Cuisine’s Custard Bun gets our vote. The skin of the bun is so airy and thin, and the filling explodes with a strong tinge of salted egg yolk goodness.

Roast Pork

Need to sin more? The Roast Pork was SO. BLOODY. DIVINE. It is miraculous how our minds caved in to the sin and we just ate away – a piece after another, without a care in the world, like diet didn’t matter anymore.

Chinese Dessert

CHILLED MANGO COULIS AND HASHIMA SERVED IN MINI PUMPKIN

This pretty little dessert (S$15 per portion) shall pamper you with some sweetness and to “cleanse your palate” after all that savoury moments. It is a chef’s signature, and an evergreen favourite among regulars. Well, it is ours too!

FRIED SESAME BALL WITH RED BEAN AND LIQUEUR CHOCOLATE FILLING

Beyond the ubiquitous Mango Sago and Mango Pudding, Xin Cuisine presents the Fried Sesame Ball with Red Bean (S$8 per portion of 4pcs). It looks like the usual fried Chinese pastry that you get at most Chinese restaurants. However, tear apart the sesame ball and you will find liqueur chocolate filling oozing out. How’s that for a Chinese dessert? Sheer brilliance.

Shin Yeh Eight Immortals Dim Sum


#1 EIGHT IMMORTALS DIM SUM PLATTER


Shin Yeh’s new “Eight Immortals” Dim Sum platter (S$12++) is extremely value-for-money and good for sharing. It comes with Steamed Chives Dumpling with Pork, Crystal Mixed Vegetables Dumpling, Steamed Shrimp Dumpling, and Steamed Chicken Dumpling with Egg Plant, Turnip and Dried Shrimps.

Shin Yeh’s rendition of the classic steamed chive dumpling (S$4.20++ for 3, a la carte) surprised us with a tasty filling and perfectly steamed ‘skin’ outer layer. The taste of the stir-fried vegetables inside the Crystal Mixed Vegetables Dumpling (S$4.20++ for 3) was distinct and a delight.

We were also impressed with the Steamed Shrimp Dumpling ($4.80++ for 4) – generous portion of minced shrimp dumpling encased inside the flour ‘skin’ of the dumpling. It is true that eggplant is an unusual filling inside the dish but we liked how it was the star of the Steamed Chicken Dumpling (S$4.20++ for 3) with its taste and texture.

#2 SIX LUCKY STARS DIM SUM PLATTER


The Six Lucky Stars platter, on the other hand, comes with Steamed Scallops Dumpling with Chicken and Shrimp, Taiwan-style Siew Mai, and the Steamed Soupy Pork Dumpling

The star of the platter is without a doubt the Xiao Long Bao (S$4.80++). It brought back memories of bursting open perfectly made and cooked dumplings back in Taiwan. The dumpling features rich broth that is made better with some sliced ginger and vinegar and a tantalising minced pork filling.

Charcoal Grilled Pork Ribs


#3 CHARCOAL GRILLED PORK RIBS


The fragrant charcoal flavour is distinct in these pork ribs. Each serving features a big piece of pork ribs that are so tasty on its own, you might end up finishing the whole plate in minutes. The Charcoal Grilled Pork Ribs (S$10++) remains as one of our favourites from the menu.

XO Pomfret Fillet


#4 STIR-FRIED POMFRET FILLET WITH XO SAUCE


For just S$48++ with a serving good enough for 3-4 people, this beautifully plated dish of stir-fried pomfret slices almost melts in your mouth and will satisfy you with its rich wok aroma. We loved that this dish was so good, and it is definitely one you’ll come back again and again for more. For rice lovers, good news because this dish is perfect with a bowl of warm rice.

Steamed Pork Buns


#5 STEAMED BUN WITH LEAN PORK AND PICKLES


When eaten warm, this dish is the perfect representation of two contrasting flavours that complement each other. The Steamed Bun with Lean Pork and Pickles (S$12++ for 4) first kick-starts our tastebuds with the salty and sour pickle flavour which slowly blends in with the tasty lean pork like a perfect pair. To tone down the fillings’ intense flavours, the freshly steamed and fluffy buns on the outside holds the whole dish together.

Braised Goose Webs


#6 BRAISED GOOSE WEBS WITH ABALONE AND MUSHROOM


This exotic item is braised until soft and tender before it is being dished out with abalone and mushroom. The Braised Goose Webs with Abalone & Mushroom (S$22.80++) is a treat on its own with every component cooked perfectly. We liked that the goose webs are more tender and smooth to chew compared to the typical chicken feet served at dim sum restaurants.

Pineapple Prawns


#7 SAUTÉED PRAWNS WITH PINEAPPLE


This dish is not a new one but we felt that it deserves its own feature because of how tremendously and surprisingly delicious it is. The Sautéed Prawns with Pineapple ($20++) features deep-fried pineapple chunks with deep-fried crunchy prawns, drizzled all over with a mild pineapple sauce.

Usually, chefs will use mango or savoury sauces, but Shin Yeh’s ingenious idea to cook these prawns with pineapple was a resounding success. Many dub it as one of their all-time favourite dishes, with even celebrities regularly returning to Shin Yeh just to savour this gorgeous plate of gold.

Fried Oysters


#8 CRISP-FRIED FRESH OYSTER SERVED WITH DIP


A classic Taiwanese snack, the Crisp-fried Fresh Oyster (S$14++) is good for sharing among 2-3 people. It is something that you can’t stop eating, and to be honest, who would have thought that other than eating oysters raw or having them fried with eggs, oysters could be fried till crispy with a unique crunch-like texture?

#9 BRAISED CHICKEN WITH GARLIC AND BASIL IN CLAYPOT


Also known as Taiwanese Three Cup Chicken or San Bei Ji, the Braised Chicken with Garlic and Basil in Claypot (S$16++) is a classic Taiwanese item and one that goes well with porridge. This is simplicity at its best, and Shin Yeh’s rendition definitely did not let us down.

Mee Sua


#10 TRADITIONAL TAIWAN-STYLE RICE AND NOODLES


Because what is a Taiwanese meal without the evergreen favourites, right? We have the Traditional Braised Mee Sua with Oysters and Pig’s Intestine (S$8++), Taiwan-style Rice with Soya Sauce Lean Pork (S$5++) and Taiwan-style Sweet Potato Porridge (S$1.80++ for free flow) to choose from. We don’t know about you, but we are honestly simple souls who can be easily satisfied with these traditional rice and noodles dishes. Then again, don’t you all agree that they are so comforting?

The incredibly tender char siew with a tinge of sweet caramelized crispy coating is such a crowd pleaser – it literally melts in your mouth, while leaving you with a sweet crisp!

We honestly have no words. ‘So damn good’ just does not do it enough justice, really. We were speechless when we sank our teeth in to the first slice; how can char siew be so amazing?! This tasty appetizer is a definite must-order and a dish that we would specially return for any day.

#6 DIVINE TRUFFLE DUCK


Another signature dish that had us all raving about was the Black Truffle Crispy Roast Duck (S$38++). Epicurean foodies and fans of Hakkasan will find this dish familiar – which is no surprise since Chef Nicky Ng is the famed Executive Chef de Cuisine back in 2011.

The moment this dish was brought to our table, the strong aroma of black truffle perfumed the dining hall. You have no idea how we couldn’t wait to devour the glistening duck. And boy, was it a life-changing dish! We can never look at roast duck the same way again.

Only available on the ala-carte menu and in half duck portions, the dish is perfect for sharing with all your truffle-loving friends.

This dish is most comforting, and boasts a taste that reminds us of home. With a sweet broth that is naturally thickened by the fresh ingredients, the Braised Vermicelli makes a splendid one-dish meal on simpler days.

Upon entrance, one will not miss TungLok Teahouse’s retro décor of 1960s old-school Chinese wording posters pinned up on the colourful tiled walls. The restaurant seeks to bring the traditional dishes and yesteryears ambience back to life without compromising on comfort. Don’t we all love such retro vibes?

With so many items to choose from, diners will find themselves spoilt rotten for choice. Well, we were! And you wouldn’t believe the feast we had.

Each dim sum is freshly handmade on the spot and steamed to order – we found ourselves hopelessly drooling over the selections of sweets and savouries! The talented culinary team has introduced a few new additions to the menu and each mouthwatering dish is created with masterly finesse.

Mushroom Buns

The dim sum that unquestionably stole the limelight was the Wild Mushroom with Black Truffle Baos (S$4.80++) which has an uncanny resemblance to the fungi itself. The fluffy buns looked so real that we were fooled for a while and thought they were actual mushrooms! The robust fillings are a mixture of Morel Fungus, Tea Tree Mushroom, Japanese Shiitake, King Oyster Mushrooms and Black Truffle Oil. We were blown away by how amazingly delicious they are, and as we are typing this now, we are salivating and already planning a next trip back.

Due to its overwhelming popularity and complex preparation methods, only 50 baskets of these cutesy buns are available on a daily basis, so if you snooze, you lose!

Wanton-Soup

Fans of the Black Truffle are in for a treat. Besides the Mushroom Bun, they can be found in two other items - namely Wantons with Black Truffle (S$6.80++) and Deep-fried Yam Puff with Black Truffle (S$4.80++). The former is a superior soup dish with silk-like wantons filled with black truffle, while the latter is a flaky sweet pastry stuffed with yam and black truffle. We think the latter is the bomb. What say you?

Birds-Nest-Buns

Another new divine creation is the Steamed Bird’s Nest Buns (S$8.80++). The pretty orangey-coloured soft buns, filled with nourishing bird’s nest and egg white, have a nectarous aftertaste. Despite the expensive ingredients, the buns remain an affordable luxury.

Glutinous-rice

We were equally in awe upon tasting the delicate Steamed Crystal Dumplings (S$4.80++) and Steamed Glutinous Rice with Diced Chicken wrapped in Lotus Leaf (S$4.80)++. We really appreciate how we are able to indulge in dim sum made with top-notch ingredients at wallet-friendly prices.

TungLok Teahouse’s Crispy Salted Egg Yolk Custard Bun (S$4.80++) are fried to a golden brown hue. The custard filling is less “flowy” in this version but its taste remains absolutely intact.

Other new impressive treats include the Fried Potato, Red Beetroot and Pumpkin Dumpling (S$5.30) and Crispy Golden Lotus Root Pastry (S$5.30++). Now, this ultra cute lotus root pastry was more than impressive! The skin was fragrant and buttery, and the lotus root was soft yet crispy; deep-fried to perfection, this is one dish that combines different textures into one brilliant creation.

Pork-Buns

If it is your first time to TungLok Teahouse, the signature Baked Barbecued Pork Bun (S$5.30++) is a must try. The baked buns filled with tepid sweet pork and BBQ sauce are undoubtedly one of the best in town.

Tunglok Ma Lai Gao

The Traditional Sponge Cake (S$3.80++) aka Ma Lai Gao is also a must-order. The moist brown sugar sponge cake was incredibly tender and tasted heavenly, and one that our folks enjoyed.

Cheong Fun

Steamed Truffle Dumplings with Wild Fungus (S$5.30++) and ‘Cheong Fun’ Rice Rolls (S$8.50++), two of Tunglok Teahouse’s hot favourites, also made us really happy.

The steamed artisanal dumplings with everyone’s favourite element – truffle – were unbelievably succulent. The ‘Cheong Fun’ Rice Rolls is an authentic Cantonese dish of fried dough wrapped in rice noodle rolls, best served with drizzled soya sauce.

Tunglok Soup

Besides Dim Sum, TungLok Teahouse also dishes out a menu of incredibly wholesome, home-style favourites. Do try their nutritious Double-Boiled Soup with Sea Whelk and Chinese Tonics (S$32++) that has been painstakingly boiled for five hours to achieve the well-balanced broth.

The aromatic Sweet and Sour Chrysanthemum Fish (S$26++) is deep-fried and boasts a crispy outer skin with flaky, fresh flesh, and served with diced capsicums.

Fried rice crab meat

The Fried Rice with Crab Meat and Egg White (S$22++) was also a stunner. The generous accompaniments of premium fresh crabmeat and egg white resulted in a smooth, velvety textured ambrosial dish. Who would have thought that fried rice could be so glorious?! We had no problems helping ourselves to seconds.

Big fan of dim sum here, and with 13 varieties to choose from in the weekend brunch menu, it is some serious pigging out here. Just the dumplings selection alone got us excited, and we love the Crystal Vegetable Dumplings, Poached Dumpling in Sichuan Sauce and the Deep-Fried Shrimp Dumpling.

The Poached Dumpling that is drizzled over with Sichuan sauce (or better known as chao shou) was a surprise favourite and we loved the intensity of the flavours in the sauce and the added kick from the red-cut chilli. Also, don’t be fooled by the lacklustre name – Crystal Vegetable Dumplings – because it is actually one of the dim sum options that we would gladly have second helpings of! That strong truffle taste is unforgettable.

Charcoal Custard Bun - Mitzo

THE MUST-TRY DIM SUM AT MITZO – BLACK CUSTARD BUN

The photo says it all. This stunner of a charcoal custard bun is decorated luxuriously with edible gold lychee liqueur on top; sure is an immediate eye-catcher. It is hard to beat this dim sum dish and we don’t want to call favourites, but the subtle taste of smoky charcoal blended well with the creamy, flowy salted egg yolk goodness that we were temporarily distracted and ignoring other dishes on the table.

PREMIUM ‘MAIN COURSE’ ITEMS

Do not overlook the main courses because some of them really exceeded our expectations. You have to dive right for the Wasabi-infused Baked Fish. The wasabi taste was not overwhelming, which we appreciate. Also, the fish itself is so perfectly cooked with a glistening centre.

Some other dishes that really won our hearts include the Stir-Fried Beef Cubes with Onion. So tender, it fell apart as we bit into it. More beef? Mitzo’s take on a steak with the Pan-fried Ribeye in Wasabi and Korean Chilli Sauce is worth trying too. Did we mention that this ribeye was extremely tender too? As avid meat-lovers, we were sold.

Mitzo Char Siew

FREE-FLOW MELT-IN-YOUR-MOUTH CHAR SIEW

Usually S$18 a pop, this plate of char siew at Mitzo is a crowd-favourite and has been dubbed by some as the best char siew in the universe. Not even kidding here, because we could eat them every day! For Sunday Brunch, this bad boy is free-flow.

Melt-in-the-mouth center, tender meat with the right amount of fats, and an impeccably caramelised exterior, the balance of flavours and textures of this sweet meat makes this the best representative of Mitzo, and one that we will always return for.

Well, well. There are few times in life when we got excited about the word ‘free flow’, and this is one of them. We are not ashamed to say that we can eat (at least) two plates each.

Pork Belly Bun

TABLE-SIDE SERVICE – CRACKLING PORK BELLY BAO

You might already be distracted by the many dishes to try, but have a go at the weekend brunch’s signature Crackling Roasted Pork Belly Bao. Because braised meat buns might be too mainstream for you, so the chef will go to your table and prep a new-age bun for you.

But they aren’t too far away from what we know of Cantonese food, really. Think amazingly crispy roasted pork belly stuffed in pillowy steamed buns. There you have it.

Mitzo Truffle Udon

NOT TO BE MISSED RICE & NOODLES SECTION

Don’t be quick to write this section off. We know your dining partners might scoff that you’re piling up on carbs at a buffet, but the Braised Truffle Udon was so good, we wanted to have another serving! The truffle aroma and taste was extremely distinct and it really elevated a seemingly one-dimensional dish.

Also, the Fried Rice with egg, char siew (yes, the same glorious one) and vegetable had us glowing with happiness at how tasty and homely it felt, bringing us back to the warmth of mom’s home-cooked food. And if you must, yes, there is ‘wok hei’ and that sealed the deal for us.

ALL YOUR FAVOURITE CHINESE DESSERTS

The Chilled Mango Cream with Sago and Pomelo Topping was a huge hit with everyone at the table with its thick consistency glided down our throats so smoothly, leaving hints of tartness from the mango.

And you see those adorable and bite-sized Pandan & Egg Tarts? You bet the custard was smooth and sweet. You can also find Double-boiled Almond Cream with Glutinous Rice Ball, and Aloe Vera with Osmanthus Jelly on the menu.

With eye-catching decors of auspicious red hues, Lokkee does come across as a typical oriental restaurant at first glance, until we laid our eyes on the kinky packaging of wet tissues and hilarious fortune cookies. Did you also notice the drawings of Chinese-fied superheroes on the wall? We love those!

The branding of the restaurant is truly bold, but behind the façade is a multitalented third-culture culinary team that is redefining traditional notions of Chinese food. You may spot familiar names on the menu, but do not be too quick to conclude anything for the execution may well take you by surprise and redefine Chinese cuisine altogether.

Crab Cake

The best appetizer on the menu? Most definitely the Chilli Crab Cakes (S$16++) served in an entree portion of two small pieces. The light and crunchy panko crust instantly reminded us of Japanese croquettes, except that it is filled with Singapore’s national dish in shredded forms, and served with a spicy sauce that well complements the fried goodness.

Succulent and juicy, yet crackling crispy on the outside, we love how the value-for-money 5 Spice Crispy Pork Belly (S$12++) is another appetizer to share. Roasted to perfection and boasting a delightful contrast of textures, this sinful dish will be worth the extra rounds of jog.

The Lokkee Egg Drop Soup is a nourishing broth boiled with chicken, eggs and shredded crabmeat. Available in either small (S$6++) or regular (S$16++), Lokkee’s piping hot soup is also thickened with cornstarch for a viscous body. The egg-based soup is interestingly presented in a ceramic pot that resembles ancient Chinese cauldrons.

There are many interesting looking dishes at Lokkee, and the 3 Egg Pyramid Broccoli (S$16++) tops the list. Like your usual veggies in 3 eggs, this dish uses a romanesque broccoli that has been sculpted to resemble a pyramid. The giant bright green vegetable sits in a bowl of fragrant thick sauce made with three different kinds of eggs – regular chicken eggs, century and salted eggs.

While some may resist unorthodox fusion dishes due to fear of inauthenticity, Lokkee makes it a point to retain the fundamental elements of timeless classics. We had a great time devouring their Firecracker Chicken Nest (S$24++), which is essentially deep-fried diced chicken served with Sichuan-style dried chillies. See those egg yolks? Well, they are actually mango puree encapsulated in molecular gastronomic spheres. These spherical “mango yolks” explode in your mouth and are intended as palate cleansers.

Flaming Pineapple

The most attention-grabbing dish award goes to the Flaming Pineapple Beef (S$28++). Watch in awe as the thorny fruit is blowtorched and engulfed in flames, and that adds flavour to the beef stew that sits within the pineapple. The result is fork tender beef slices with a fruity hint, and a table of impressed diners.

We also loved the Lokkee’s Stir-Fried Lamb Pockets (S$23), that was surprisingly free from the overwhelming gamey smell. The marinated lamb loin have been stir-fried in Chu Hou paste and diners are to stuff the tender fillets into the sweet bun pockets as fillings.

Savour the Baked Oysters with Bacon (S$22++), which comprises a plate of six fresh oysters baked au gratin served with a lime and lemon wedge. The bacon bits and cooked cheese along with a dash of lemon and lime juice have actually significantly reduced the overall brininess of oysters.

Revel in the F4 (S$32++) too! No, not the disbanded Taiwanese boy band. This impeccable seafood dish is actually named after the gastronomic technique of Flash Frying Fish Fillets (get it?). The fish fillets are fried briefly in chilli oil and the end result is scrumptiously delicate pieces that reminded us of the classic Sichuan Boiled Fish (shui zhu yu).

The Sichuan ‘Mala’ Grilled Fish (S$58++) is a chef-recommended wholesome delicacy too. The grilled fish is placed in a sizzling hot clear water bath and served with cabbage, dried chillies, green peppercorns and tofu skin. Great for families to share!

Lokkee Pork Bao

Lokkee’s palm-size steamed buns were inspired by celebrity chef Eddie Huang’s Bao Haus, but we reckon they resembled Momofuku’s baos more. The key distinguishing factor lies in the thickness of the buns – Lokkee’s baos are notably thin and are served on a bamboo woven basket.

All baos are served in pairs and the signature baos are Pork Crackling Bao (S$13++) and Colonel San Da’s Chicken Bao (S$12++). The former is a crispy pork crackling with fermented beancurd sauce. The latter, as you might have guessed from the name, is a fried chicken with maple gravy.

By the way, why the name, right? You must be wondering. Remember who Colonel Sanders is? Yes, Lokkee has a Colonel San Da for their version of fried chicken. LOVE IT.

Relish in the sinful Bacon Delight (S$12++) that boasts butterscotch and bacon infused ice-cream sitting in a deep-fried hot crunchy bread bowl drizzled with raspberry and chocolate sauce. If you think that is all, you are wrong. Candied bacon strips and real bacon bits make up a significant part of the exotic dessert and bacon lovers really do have to give this a go.

Trust us when we say that the experimental desserts will have you doing a double take. The Custard Egg Rolls (S$10++) look exactly like deep-fried spring rolls, except that they tasted nothing like it.

The sweet dipping puree served on the side is made from berries and carrot, but could be easily mistaken from chilli or ketchup instead. How brilliant is the presentation! Enjoy a good laugh as your dining companions start questioning about a potential “wrong order”.

Chinese Noodles Takeout

From Cantonese to Shandong, it is immensely difficult to categorise the various diverse Chinese cuisines into one category. But one characteristic remains true for almost all Chinese restaurants’ takeaways in global cities such as New York City, London and Sydney.

Yes, it is the famous Chinese takeout box! What piqued our attention is that Lokkee has decided to serve their Chow Mien (S$14++) in those wire handle boxes too. Western expats will find eating the stir-fried noodles with celery, char siew, carrots and shredded chicken awfully nostalgic.

Choose between a Christmas Day Yum Cha brunch at S$98++ per person and a premium set menu at S$148++ per person. The set includes a very rich and flavourful pumpkin pork ribs soup with pacific clams and king oyster mushrooms, and wok-fried lobster with truffle; you bet it took our breath away.

The Yum Cha brunch features over 40 types of unlimited servings dim sum, Cantonese favourites and a serving of Mitzo’s supreme dish (Oven Baked Champagne Lobster, Braised Whole Abalone and more).

A LITTLE BACKGROUND ABOUT TEOCHEW CUISINE

Teochew cuisine emphasizes a lot on the freshness of the ingredients, and the culinary is circled around bringing out the essence and true flavours of every ingredient.

Teochew dishes are hence light in taste and more often than not “naked”. Very often associated with healthy food, the method of preparation revolves largely around steaming, poaching and braising. Stir-frying is not uncommon, but oil is used sparingly.

Sauces and condiments are aplenty when it comes to dining the Teochew way. Mostly made from scratch, there is a myriad of options when you need something to complement your dishes; think chilli and soya, garlic sauce and fermented bean sauce.

Dumplings Swatow

AUTHENTIC TEOCHEW DISHES – COMFORT FOOD FOR THE SOUL

Swatow Seafood Restaurant has two separate menus for you to choose from – the Seafood menu and the Teochew Porridge menu. You can order dishes from both menus simultaneously.

Start your meal with these Crystal Dumpling Teochew Style (S$9 for 6). Steamed and best eaten piping hot, these dumplings wrapped in translucent skin are part of the dim sum menu and make a great appetizer!

Cold Crab Swatow

Cold crab is a classic Teochew dish and the Teochew Cold Crab (Seasonal Price) at Swatow is a must-order. What lies beneath its stark simplicity is the sheer freshness. Teochew cold crabs’ emphasis is on the roe, and if there is no substantial amount of the creamy delight, Swatow will not serve it. The best and only the best will be put on your table; this is dedication to the true Teochew cuisine.

So this dish will definitely be worth your while. Steamed first then served chilled, enjoy the true experience; eat it plain like that and enjoy the beautiful creaminess – without any sauce and condiments.

Braised Duck Swatow

Because the Teochews take their braise seriously, a meal at Swatow is not complete without one or two braised dishes. The Teochew Braised Duck Meat (S$15 per serving) hit us hard with nostalgia. The tender meat soaked in the sauce is something we can enjoy every day, and is served with beancurd on the side.

If you prefer more exotic cuts of the duck, Swatow Teochew Restaurant also offers serving of Braised Duck Webs and Wings (S$12 per portion).

Kampong Chicken Swatow

Now, this is one dish that you must try!

The Swatow Kampong Chicken (S$12 per serving or S$18 for half chicken) won us over with the first bite; everyone on the table had seconds. Well-cooked chicken that is prepared with a fermented bean sauce, producing a savoury flesh that is so smooth and succulent.

It comes with a side of ginger sauce, though we think the chicken should be best enjoyed in its naked glory.

Steamed Pomfret

This dish of Steamed Pomfret (Seasonal Price) should be comfort food for all, yes?

Prepared in the same style that our parents whip up in the kitchens at home, this classic fish dish is one of the best representation of Teochew cuisine. Only the freshest catch can be used, else this dish would reek of stinky fishiness.

At Swatow, the silver pomfret is huge with shiny white flesh. Steamed with preserved vegetables, ginger and plum, this healthy fish dish is one that will please every diner on the table.

Oyster Egg Swatow

This came out as one of the top contenders for the best dish of the day. The Crispy Oyster Omelette (S$15 per serving) looked every bit unphotogenic, but you want to know what makes it one of Swatow’s best-selling dishes?

It is the fact that more eggs are used instead of flour – like what it normally is everywhere else – and that they deep-fried it to a brilliant crisp, leaving us all in awe. The accompanying sambal sauce served on the side is filled with juicy and plump oysters. What more can we ask for?

Eight Treasures Swatow

The Teochew Braised Eight Treasure Vegetables (S$16 per serving) is a huge, substantial portion. This should be the star vegetable dish at Swatow.

Mustard greens are used despite the higher food cost because its sweetness will elevate the taste of the entire dish. Together with several types of mushrooms and moss vegetable, this is one value-for-money dish!

Platter of 4 Swatow

On to more Teochew goodies, and this platter of four sides feature quintessential Teochew-style bites.

The four stars are Chilled Jellied Pork Knuckles (S$8), Teochew Chilled Sliced Braised Pig’s Head (S$8), Crispy Pork Roll (S$8) and Crispy Pork Liver Roll (S$10). They are all served chilled, ala the traditional Teochew way.

The liver roll is especially tasty as they used a combination of different livers – chicken, pork and duck – to achieve this texture and taste. And of course, the pork jelly is what Teochew chefs take pride in. It is essentially braised pig’s legs made into jelly form and chilled before serving,

Fried Yam Swatow

THE STAR DESSERT

The Sugar-Coated Yam Cubes (originally made into bars) (S$16 per serving) is the only dessert at Swatow you need to try. For one, few Teochew restaurants in Singapore offer this dessert as it requires notable skills and a significant amount of preparation time.

It looks simple, but read this. The chef has to first deep-fry the yam cubes and set them aside. He then melts the sugar in the wok, and tosses the yam cubes back in before turning on a huge fire. Immediately after, he tosses again rapidly, this time to transform the melted sugar back into a powdery form that will cover the yam cubes completely.

The end result is one sweet treat so amazing that loyal patrons return for regularly. Do note that the yam cubes will not be available during the Chinese New Year period.

Teochew Yu Sheng Swatow

SOMETHING FOR THE LUNAR FESTIVITY

Available during the Chinese New Year period is this classic Teochew-style yusheng that differs slightly from the conventional ones. No pickled and preserved elements; just vegetables that are freshly grated, and dressed with a homemade plum sauce that was not cloyingly sweet.

It was almost like an ideal palate opener for us as each bite was very refreshing and crunchy.

We have had many good red bean pancakes but the restaurants version – Crispy Red Bean Pancake (S$10.50), is a golden deep-friend masterpiece that was fragrant, crisp and just overall delightful. The pretty huge portion is also good to share between two people or in a group.

Another exciting must-try dish here is the Chinese Pizza (S$10.80), and it is aptly named so. This spin on a traditional Italian delicacy could not be more different than what it was named after. The ‘pizza’ is a flaky crust stuffed with generous fillings of meat and vegetables.

You can also dig into the best-selling Noodle with Minced Pork & Soya Bean Sauce (S$6.80). This bowl is portioned in a way that you still can have some sides here without over-stuffing yourself.

Paradise Teochew Restaurant’s talented kitchen team is helmed by Hong Kong-born Executive Chef Cheng Fa Kwan. Raised in a family of Teochew chefs, Chef Cheng’s love for food is unmistakable; he has been exposed to and cooking Teochew cuisine for the past 34 years!

Paradise Teochew Restaurant is a 196-seater restaurant, interestingly located at Chinese Swimming Club and offers a quick respite from the city’s suffocating crowds. We love how the common area is a bright space with natural sunlight streaming in in the day through the floor to ceiling glass windows.

Private rooms are also available for bookings.

The East is too far-flung for you? Then countdown to the second outlet of Paradise Teochew Restaurant that will be opening at Scott’s Square some time around June this year. The upcoming outlet in the heart of town will boast a slightly more posh environment with a slightly different menu, but with most of the signatures still available for all to indulge in.

Teochew cuisine – also known as Chaozhou cuisine – is renowned for its healthier renditions of seafood and poultry (when compared to other Chinese recipes). Oil and seasonings are used sparingly in the preparation of Teochew dishes as the essence of Teochew cuisine lies in bringing out the food’s natural taste through various preparation and cooking methods.

Steamed Pomfret

Braising, poaching and steaming are popular cooking techniques in Teochew cuisine and over at Paradise Teochew Restaurant, you will notice that most main dishes are prepared via these methods.

The Teochew Style Steamed Pomfret is a Teochew classic, and a dish that will put a smile on your folks’ faces. Trust us on this – we’ve made our moms happy with this steamed fish dish served in a fragrant broth with tomatoes and salted vegetables (seasonal price).

The Crispy Sweet and Sour Noodle in Teochew Style (small – S$14++, medium – S$21++, large – S$28++) is an unmissable staple of Teochew fare. Definitely one of our favourite and must-order dishes when at Paradise Teochew Restaurant!

At first glance, the signature dish looks like a pan-fried pancake – but it certainly isn’t. Noodles are interestingly pan-fried on both sides, yet leaving the centre still moist, then cut up into triangular shapes. And because Teochews love enjoying their food with condiments, this crispy noodle dish is to be eaten with the accompanying vinegar and sugar.

It may sound weird, but it really is a refreshing take from the usual noodle dish, with a sweet and sour (as its name has it) contrast that is easy on the palate.

Teochew braised specialties are an integral part of a typical Teochew meal too.

Here at Paradise Teochew Restaurant, choose from a selection of braised goodies that include duck web, duck tongue, pork knuckle, pork belly, pig’s intestines, octopus and more.

There is a trio combination (small – S$24++, medium – S$36++, large – S$48++) where you get to select three different braised delicacies.

Some sharing dishes to try are Sautéed Scallop with Asparagus in XO Sauce (small – S$26++, medium – S$39++, large – S$52++) and fluffy Pan-fried Oyster Omelette in Teochew Style (S$16++ per portion). They are guaranteed crowd pleasers, and goes great with the in-house chilli dip.

Another must-order is the Sautéed Sliced Beef in Satay Sauce (small – S$20++, medium – S$30++, large – S$40++). This is an underdog, and we were ashamed of judging it by its rather unappetising outlook!

Ultra thin slices of beef are browned almost instantaneously over high heat, hence retaining its tender texture and savoury juiciness. Served atop generous amount of greens and doused in aromatic satay sauce specially imported all the way from Hong Kong, this is one sharing dish that packs a punch and is more than surprising.

We love our dim sum, and Paradise Teochew Restaurant’s superb Teochew-style dim sum deserve a special shoutout. Its comprehensive menu of classics and contemporary interpretations are only available during lunchtime.

Where should we even start from?

Customers can expect the usuals, e.g. Baked BBQ Honey Pork Buns (S$5.40++ / 3 pcs) and Steamed Pork Dumpling “Siew Mai” (S$5.80++ / 4 pcs).

But will you take a look at them Steamed Custard Bun in Piggy Shape (S$5.80++ / 3 pcs)? The kids are bound to love these sweet buns filled with custard and pine seeds.

The Steamed Glutinous Rice Roll in Teochew Style (S$4.80++ / 3 pcs) is a dim sum dish of scrumptious sticky rice encased within a pillowy soft white bun. Soft, warm and mildly sweet, this dim sum dish is certainly something we don’t see every day at regular dim sum houses. Good on its own, or you can dip it in the in-house chilli dip too.

And of all that we tried, it was Paradise Teochew Restaruant’s Deep-Fried Mango Roll (S$5.80++) that stole the limelight. We never thought a ubiquitous mango roll would made us swoon, but the fried treat is really a lavishly-stuffed roll of juicy mangoes, and the flavours burst certainly had us hooked.

The all-inclusive dim sum list too showcases irresistible fried options. We reckon their Deep-fried Taro Puff with Diced Chicken and Prawn (S$5.80++ / 3 pcs) and Crispy Spring Roll with Braised Duck Meat (S$4.80++ / 3p pcs) would fit the bill.

The Deep-fried Diced Abalone Dumpling in Jumbo Shape (S$6.50++) will have all you Instagram addicts squealing in delight, too!

When we talk about Teochew cuisine, we think of ‘orh nee’ as desserts. And yes, the Mashed Yam with Gingko (S$4.50++ per pax) and Mashed Yam with Pumpkin (S$4.50++ per pax) is exactly what represents Teochew desserts best.

The deep purple-coloured dessert is effectively yam puree that is consistently smooth and creamy, without being overbearingly sweet.

Watch in awe as the fog dramatically unfolds your delicious ice-cold appetiser.

Who says you can only have Yu Sheng during Chinese New Year festive period? Over at TungLok Heen, customers can defy all traditions and tuck into the refreshing Singapore Slaw (S$18++) at any time of the year!

Singapore Slaw is actually Chef Susur’s signature dish. Inspired by the Yu Sheng, it consists of 19 ingredients and his special sauce. It has been featured extensively by several international media and is definitely something that you should try when dining at TungLok Heen.

Our idea of comforting soup at TungLok Heen is the Double-boiled Superior Fish Bone Soup with Fish Maw (S$30++ per pax). It is a nourishing broth that is packed with collagen and tonics. So rich this soup is, because you are really sipping the essence of all the premium ingredients with every spoonful!

The Roasted Irish Duck (half duck – S$35++, whole duck – S$60++) is a must-order. Popularly known as ‘London Duck’ – think succulent flesh, fragrant fats and glistening aromatic crisp skin. It is one of the best renditions we’ve had, and while plump, it was not over-the-top gross that will have you feeling sick.

Fans of crabs definitely have to give TungLok Heen’s White Pepper Sri Lankan Crab (Market Price) a shot. The gigantic shellfish is loaded with wholesome crabmeat and packs a peppery punch with every bite.

The Grilled White Sultan Fish with Hot & Sour Consommé (Market Price) is perfect for sharing and it was a crowd’s favourite on our table.

For the uninitiated, the White Sultan Fish is rich in Omega-3 oil and it has very delicate flesh that brings out a unique sweetness and amiable savoury taste.

The large fish is dunked in a flavourful clear soup. The addition of peppercorn added a kick to the consommé, making it so addictive with every sip.

And there are skewers to share too. The Boston Lobster (S$76++) and Rock Oyster (S$8++) are cooked with cheese and herbs, and the Kurobuta Pork Loin (S$20++ for two skewers) and Wild Mushrooms (S$16++ for two skewers) come with a charred fragrance that is smoky with every bite.

More meat? The Char-grilled Marinated Lamb Rack in Lamb Reduction (double-rack – S$22++, single-rack – S$12++) served with Fresh Chilli Mint-Chutney sure didn’t disappoint. The delicate red meat’s gaminess has been significantly reduced by the herbs.

You’ve probably had wasabi-mayo prawns before elsewhere since lots of Chinese restaurants in Singapore make this dish available on their menu. But did you know that this popular dish was actually created by Susur in 1997 at TungLok Seafood? We kid you not; this guy was the one who set the trend. Guys, the Wok-fried Prawns with Wasabi-mayo Sauce (S$16++) by its rightful creator at TungLok Heen is to die for.

All good things have to come to an end, but if you could end your meal with a sweet note, then it has to be TungLok Heen’s classy Asian desserts. The Chilled Aloe Vera Gelo (S$10++) and Coconut Jelly (S$15++) are our picks. The former is infused with ginseng and served in a Chinese snow pear atop a bed of ice, while the latter is placed in a young coconut, topped with coconut sherbet and crispy black rice.

Do take note that guests have to adhere to smart casual attire and guests should avoid wearing shorts, singlets and slippers. Reservations are strongly recommended, especially for those who are planning to dine in a big group.

No better way to start your meal than with the Double-boiled Chicken Soup (S$22++ per person). Unlike traditional herbal soups that are served in ceramics, Yàn’s rendition of the chicken broth is interestingly served in a young coconut and with crispy breadstick on the side.

Dig in and you will discover a few clams, dried longans and goji berries. The overall taste profile is light and aromatic with a lingering aftertaste of fresh coconut flesh. It is one chicken broth that we won’t soon forget.

Yàn’s signature Crispy Roast Suckling Pig (half – S$124++, whole – S$248++) requires an advanced ordering a day prior to your visit, but the lusciously crispy skin will be worth the effort.

A recommendation by the chef was the Pan-fried Crab Meat with Egg White (S$12++ per person), and we sure loved it. The hearty dish features braised duo vermicelli tossed served with crabmeat, beansprouts and golden pumpkin sauce. Grab a spoonful of the de-shelled crustacean mixture, wrap it with a green lettuce and you are good to go.

Roasts are synonymous with Cantonese cuisine, and Yàn showcases an impressive selection of mouthwatering roast delights – such as Barbecue Honey Pork (from S$18++), Peking Duck (half – S$40++, whole – S$80++), Roast Crispy Chicken (medium – S$23++, large – S$46++), Roast Duck (from S$20++), Roast Pork Belly (S$14++ per serving) and Soya Chicken (from S$18++).

#5 FRIED LIVE PRAWN WITH CRISPY NOODLE BALL


Master Chef Chan Kung Lai – with over two decaades of culinary experience – has successfully nailed the haute Cantonese cuisine with his gorgeous creation of Fried Live Prawn with Crispy Noodle Ball (S$12++ per person).

The seafood dish itself is an art; diners are supposed to pour piping hot broth over the deep-fried ball of crispy noodles, and the end result is a partial-crisp-and-partial-soft texture. Served with delicate sweet prawns, it is one light dish that is seemingly simple, but it will leave you craving for more with its light sweetness from the broth.

#6 PAN-FRIED CHILLI CRAB MEAT BUN


Ever wondered what a cross between Cantonese fare and Singaporean cuisine would look like? Well, the answer is right here.

Yàn has pushed all boundaries and surprised us with their newest dim sum creation – the Pan-Fried Chilli Crab Meat bun (S$9++ / 3 pieces). Think generous amounts of our national dish Chilli Crab stuffed in tasty wok-fried buns. It is akin to eating chilli crab the usual way, with our mantous and all, but this packs a different punch with the bun’s fragrance and slight oiliness, complete with sesame seeds no less.

#7 DEEP-FRIED CUSTARD BUN FILLED WITH SALTED EGG YOLK


We are unabashedly ashamed of being hopelessly obsessed with custard buns, or better known as liu sha bao. In fact, we are on an eternal pursuit to hunt for the best in town, and with this meal, Yàn has made the cut to our top few.

Yes, Yàn has seriously taken these awesome salted egg yolk buns to a whole new level. These buns are deep-fried, yet successfully retained its lava fluidity. We admittedly took a long time to photograph these treats – so imagine our surprise that the yummy lava was still flowy when we finally tucked in. Thumbs up, Yàn! We will be coming back for more of these!

#8 HOT ALMOND CREAM


Hot Almond Cream is a classic and timeless Chinese dessert – made from almond and rice – that instantly warms our hearts. Head Chef Chan Kung Lai is born and raised in Hong Kong, which is no surprise there on why the sweet treat tastes authentically Cantonese.

No frills about the cream, really. Just finely pounded almond to create the smoothest almond cream with equal consistency and at just the right degree of sweetness.

#9 DIM SUM COMBINATION PLATTER


Yàn does an excellent job in injecting new elements of surprises in its presentation of dishes, but without compromising on the key essences of authentic Cantonese recipes.

The Dim Sum Combination Platter (S$18++) features six delicate bite-size treats – steamed black truffle prawn dumpling, steamed fish roe siew mai, steamed vegetarian dumpling, deep-fried taro dumpling, deep-fried stuffed golden mushroom and deep-fried seaweed beancurd sheet.

Choose your desired way of cooking.

For the bamboo clams, the range to select from are Steamed Bamboo Clam with Minced Garlic in Soya, Steamed Bamboo Clam with Enoki Mushroom in Spicy Peanut Sauce and Steamed Bamboo Clam with Preserved Vegetables in Soya.

Nourishing broths that have been double boiled for hours with premium ingredients, the Weekend Brunch includes unlimited servings of the Soup of The Day that we always look forward to. The Braised Abalone Strips & Bamboo Pith Soup is for those who prefer soups with a thicker consistency.

Some other wok dishes to love are the Stir-Fried Scallop with Egg White & Fresh Milk and Crispy Duck Roll.

And the Braised Truffles Pork Ball – a Cantonese-style pork ball infused with truffle – is one surprising dish. Hand-beaten meat balls are prepared fresh daily, and the truffle adds fragrance that cuts through the strong meaty smell.

#1 AUSTRALIAN LOBSTER TWO WAYS – CHILLED & DEEP-FRIED

If you are shooting for a fancy meal or simply want to indulge in the best and most luxurious dishes, go for the Australian Lobster prepared in two ways (S$58++ per pax). Lobster is a tricky ingredient to perfect. However, the masterchef at TungLok Signatures has aced both ways of preparation.

The chilled lobster is exemplary and very refreshing. We recommend starting out with this one before moving on to the deep-fried lobster. The deep-fried lobster was something we couldn’t forget – beneath the crunchy exterior is a glistening juicy center that is well complemented with the accompanying honey sauce.

TungLok Braised Pork Rice

#2 BRAISED MINCED PORK RICE

We have to admit, this pork rice bowl (S$8.80++ per pax) did not catch our attention at first as it faded into the background beside all of the other upmarket, classy dishes. But we regretted judging it after the first mouthful. The braised minced pork a la Taiwanese style was so tasty and flavourful, with the egg to complete the experience.

TungLok Charcoal Beancurd

#3 BRAISED BAMBOO CHARCOAL BEANCURD

This black beauty is a signature dish in TungLok Signatures and something we can never get bored of. You may think it is just another bamboo or beancurd dish, but we are telling you this – the Bamboo Charcoal Beancurd (S$24++ per sharing portion) is going to be the best beancurd dish you’ll ever try.

The beancurd is handmade with a flawless texture, with light woody notes of bamboo. The sweet pumpkin sauce elevates the taste of the beancurd without overpowering the freshness of the dish entirely. No trip to TungLok Signatures is complete without this dish!

Tung Lok Salt-Baked Chicken

#4 FLAMBÉ VOLCANO SALT-BAKED FORTUNE CHICKEN

The Salt-Baked Chicken (S$98++ per chicken) is both a treat for the eyes and the palate. The poultry is enormous and the chef will flambé it right before your eyes; it is theatrical to say the least.

The chicken is only flavoured with a salt crust, and the natural juice of the poultry is brought out through the flambé process. Great sharing dish, even better experience.

TungLok Foie Gras

#5 PAN-FRIED FRENCH FOIE GRAS AND PEKING IRISH DUCK SKIN

This was unforgettable. The Pan-Fried French Foie Gras (S$22++ per pax) is meant to be rolled up with glistening Peking Irish Duck Skin and Wheat Wrap to produce a magical umami goodness in your mouth. All the premium tastes wrapped in one; the kind of “explosion” we appreciate.

TungLok Lobster Steak

#6 PAN-FRIED LOBSTER STEAK IN CHEF’S HOMEMADE SAUCE

More lobsters for you? Yes, we have the Lobster Steak (S$28++). This is slightly different, with the sweetness of the crustacean brought out through light pan-frying.

TungLok Deer Tendon

#7 SICHUAN-STYLE DEER TENDON WITH CHILI ON HOT STONE PLATE

It is not every day that you see Deer Tendon (S$38++ per serving) on menus. The tendon must be eaten quickly so as to savour the best taste. The texture is very similar to beef tendon and no less delicious. You might be intimidated by it if you haven’t tried tendons, but the Sichuan sauces and spices will balance the taste out altogether.

TungLok Soon Hock Fish

#8 ‘SOON HOCK’ FISH TWO WAYS – DEEP-FRIED & STEAMED

Fish is a mainstay at every Chinese restaurant. TungLok Signatures takes it up a notch by, again, serving it two ways (S$12++ per 100g). The steamed version is cooked in a traditional Chinese style, with Chinese Wine and Parsley. Steaming it with Chinese wine gives it a very pleasant aroma and also a very smooth and moist texture on the fish. It is no wonder that this is always the preferred way to cook fish!

The Deep-Fried Soon Hock is served simply with some soya sauce as to not over-complicate matters. We liked that the fish remained juicy inside despite being deep-fried to a golden brown.

TungLok Durian Dessert

#9 CHILLED DURIAN WITH BLACK GLUTINOUS RICE PURÉE

To end your meal, complete it with the all-time favourite – Chilled Durian with Black Glutinous Rice Purée (S$12++ per serving). The local-style dessert is served in a coconut shell and filled generously with black glutinous rice and very creamy durian. We went a little too gaga over this!

#10 YUAN YANG ALMOND & SESAME CREAM

However, if you prefer something a little lighter, the ‘Yuan Yang’ Almond and Sesame Cream (S$6++ per serving) might work better for you. Each bowl is beautifully presented as a Yin and Yang symbol. The cream is rich and smooth and it comes with plenty of healthy and beauty benefits.

EXECUTIVE CHINESE CHEF KU KEUNG’S TASTING MENU


WHAT TO EXPECT: Golden Peony Executive Chinese Chef Ku Keung’s Tasting Menu showcases a carefully curated five-course meal that is available daily during lunch and dinner.

Indulge in five gourmet creations put together by celebrity Chef Ku Keung and think of the feast like a degustation at a very reasonable price of S$100++ per pax. The menu changes every 3 months, featuring Chef’s signature and newly launched dishes.

The current menu will have you beginning with an appetiser platter, which consists of a Fresh Prawn and Sea Jelly with Minced Garlic, Preserved Asparagus and Steamed Beancurd filled with Prawn Mousse topped with Scallop and Crab Roe. Eat these bite-size savouries with their homemade XO chilli sauce.

Golden Peony’s specialty dish – lobster meat wrapped with sliced fish and fish roe, served with baby spinach in a rich seafood broth – is a decadent highlight featuring a palm-size seafood plated beautifully on a crystal-like glassware dish atop a black ceramic plate.

But what we absolutely dig is the popular Roast London Duck served two ways. We have previously fallen in love with the hotel’s rendition of London Duck from its Sunday Brunch, and this star dish will be part of the tasting menu too!

Eat the poultry as it is or like how you would eat a Peking duck by wrapping the succulent flesh in delicate crepe. The thin wrap – handcrafted from scratch with three types of flour – is unbelievably soft and actually does not harden even when left in the open for long.

The fourth item on the tasting menu is the Pan-fried King Prawn with Superior Soy Sauce served with Fish Noodle and Baby Cabbage. These noodles are no ordinary noodles – they are actually made from fish, and they are springy and slightly sweet.

The 5-course meal will be concluded with Golden Peony’s divine avocado-coconut dessert. Chilled Avocado Cream with Vanilla Ice-Cream served in a Whole Young Coconut alongside a Baked Sweet Potato Filo Pastry – the former is a creamy addiction that is subtly sweet with nuances of coconut fragrance, while the latter is a signature dessert that is made in the shape of a swan. This dessert alone is well worth the experience of the Tasting Menu.

WHAT TO EXPECT: Celebrate the end of a work week with Golden Peony’s Weekend Dim Sum Experience during lunch on Saturdays and Sundays. Diners get to select four choices of dim sums and four specialty dishes per table and a choice of soup from the extensive menu. End on a sweet note with your favourite dessert choice.

From classic Cantonese Steamed Prawn Dumplings (aka Har Gow) and Steamed Barbecued Pork Buns to modern contemporary Crispy Sea Perch and Avocado Roll topped with Mild Spicy Lime Sauce, expect a mouthwatering plethora of artisanal dim sums. The sea perch is the best thing we’ve tried at Golden Peony – fresh white fish deep-fried with avocado, then coated with a tangy sauce; it was addictive beyond comprehension.

WHAT TO EXPECT: We could hardly believe our eyes when we saw that the price of Golden Peony Weekend Dinner Family Set Menu – S$180++ for four pax. This is certainly one of the best dining deals in town.

The family set menu is made up of five premium dishes – a half portion of Roast London Duck, Double-boiled Superior Fish Soup with Fish Maw, Bamboo Pith and Wolf Berries, a choice of either Stewed Prawn Glass Noodle or Steamed ‘Soon Hock’ Fish, Traditional Claypot Rice with Chinese Sausage, Live Sausage, Wax Duck and Wax Meat and Chilled Lemongrass Jelly with Aloe Vera and Lychee.

This is the same London duck, except that you will get a full duck instead of a half portion if you quote ‘LIC_Family’. That’s right – no other terms and conditions.

And the steamed fish dish is what we all affectionately know as the ‘wedding fish’, except that Golden Peony’s rendition is way better and fresher. And the premium soya sauce used is also less salty.

Dim sum is a vital part of Cantonese culture.

Over at Si Chuan Dou Hua Restaurant At PARKROYAL On Kitchener Road, the exquisite array of authentic steamed, deep-fried and pan-fried dim sums served are inspired by Si Chuan and Cantonese cuisines and are meticulously handcrafted.

And there is an ongoing buffet that features 50 types of authentic dim sum – you’ve got that. All free-flow! From 15 September to 31 December 2016, head to Si Chuan Dou Hua for the ‘Nostalgic Dim Sum Buffet Feast’. There are two seatings on weekends, where the timings are split to 11.30am – 1pm and 1.30pm – 3pm (S$38++ per adult, S$22.80++ per child).

Listen up, here is the best deal – every two adults only have to pay a total of S$50++ (valid daily, minimum 4 to dine). What a fantastic deal we have here!

Si Chuan Dou Hua Rice Noodles Roll

COLD APPETIZER

Appetisers are so important because it either makes or breaks the mood when you begin your meal.

A rice noodle roll is usually served as a snack or appetiser in Hong Kong and such is the case at Si Chuan Dou Hua too. We are glad to say that the chefs who prepared the Marinated Rice Noodles Roll with Shredded Duck have done a great job in stimulating our appetiters with this teaser!

Other appetisers on the menu include Sliced Pork in Garlic and Chilli Sauce, Marinated Black Fungus and Turnip with Preserved Chilli and Seaweed with Shredded Carrot and Radish in Chilli Oil.

DOUBLE-BOILED SOUP

A buffet at Si Chuan Dou Hua is not complete without a serving of the signature Double-boiled Cartilage Soup, which we fell in love with immediately upon the first sip.

In the process of double boiling, the ingredients are steamed for a couple of hours and all the flavours are locked in, leaving you with nothing but an honest and concentrated bowl of soup. This is a prized dish and every diner is entitled to a portion.

BARBECUED MEATS

The Crispy Roasted Pork from the barbequed meats section left a deep impression on us. Crispy skin that sits atop the succulent meat, so well roasted in a lovely reddish brown colour. Beneath the crackling skin, the meat remained juicy with an addictive hint of saltiness.

The Roasted Duck is also worth your calories with its thin crisp skin and tender meat. There is a good ratio of fats to lean meat, and is a great choice for those who do not like the generous fatty bits in the roast pork!

Barbequed items are limited to only one serving, but rest assured that the chefs will ensure that the quantity is good for the respective number of diners.

STEAMED DIM SUM

A unanimous favourite on the table was the Steamed Yam Bun with Custard. As we pulled apart the piping hot purple bun, the overflowing custard dripped all over our fingers and we had an enjoyable time licking them up!

This has got to be one of the best ‘liu sha bao’ we have ever tried. Two thumbs up for the chefs at Si Chuan Dou Hua!

An interesting dish you need to order is the Steamed Chicken and Mushroom with Soya Bean. We initially did not have high expectations of this unassuming dish but its sweet aroma caught our attention. The dish is a mix of salty and sweet; the saltiness came from the diced chicken and sliced mushrooms, and the sweetness from the soya bean.

The steamed dim sum menu also features “Hakka” Dumpling with Turnip; Char Siew Bun with Preserved Vegetables; Prawn Dumpling with Coriander and a vegetarian option of Steamed Vegetarian Dumplings with Black Truffle.

PAN-FRIED AND DEEP-FRIED DIM SUM

Yes, more dim sum.

We had a good opinion of the Fragrant Yam Cake with Waxed Meat, which is a brilliant combination of delicate yam and waxed meat glutinous rice served in tiny cuboids. The Pan-fried Duck Meat Buns are interestingly stuffed with aromatic Goose Liver Sauce and are served piping hot.

Other items to try from this section include Hong-Kong Style Baked Pork Belly Bun with Taro and Macau Deep-fried Bun with Pork Chop.

CHEF’S SELECTION

The Stir-fried Beancurd with Leek and Spicy Sauce and Stir-fried Sliced Beef with “Si Chuan” Spicy Sauce may look like the average side dishes but you should not neglect them.

Si Chuan Dou Hua Braised Pig Shank

And the house’s star dish is undisputedly The Braised Pig Shank and Quail Egg in Vinegar and Ginger. Typically known as a “confinement dish” for post-natal diets, this dish is a unique blend of sour and savoury. It is not for the faint-hearted, but if you are up for a good rendition of pig’s trotters in vinegar, Si Chuan Dou Hua at PARKROYAL on Kitchener Road is where you should head to.

DESSERT BAR

Of course, no dining experience is complete at Si Chuan Dou Hua Restaurant until you have sampled their renowned bestseller, the famous Homemade Beancurd with Wolf Berries. The smooth beancurd (dou hua) – characterised by its velvety silkiness – is complemented with healthy goji berries.

There are several other desserts items like the Sponge Cake and Honey Comb Cake as well as the classic cream of fresh mango pomelo available on the buffet line  too, but we say go for seconds and thirds of the beancurd.
